Ox Box Sausage Board

For this month’s box, as we have two unique flavored sausages, we wanted to instruct you how to properly cook them and present them on a sausage board with recommended accoutrements.

Sausage Cookery:

For the sausages, there are a myriad of ways you can cook them. Whether it’s grilling over an open flame, searing in a pan, simmering in a flavored liquid (beer, broth, etc.) or roasting in the oven, the most important part is that the sausages reach an internal temperature of 165 degrees. We (obviously) prefer the grilling method, as live-fire cooking is a major part of our identity as a restaurant group, however feel free to choose your preferred method! Either way, once the sausages reach the required internal temp, allow them to rest for 6-8 minutes before serving.

Presentation:

Once the sausages are rested, slice them at a 45 degree diagonal bias in 1/2 inch slices. Spread them out, keeping their round nature, on a serving platter of your choice. Fill in the extra space on the board with all sorts of accoutrements based on what you would like to serve with the sausages. Here is a list of things we feel would go extraordinarily well with these two:

Al Pastor Sausage:

Mango Salsa
Pickled Red Onions
Fresh Guacamole
Charred Pineapple
Mini Corn Tortillas
Onion Jam

Texas Twinkie:

Hawaiian Rolls
Baked Beans
Cole Slaw
Honey Mustard Aioli (made with DUKES brand Mayo)
Your Favorite BBQ Sauce
