CHARRED JALAPENO & SPRING ONION WITH ROASTED CABBAGE AND BACON
INGREDIENTS:
1 head green cabbage, quartered and de-stemmed
4 oz sliced ox bacon, large dice
1 medium yellow onion, large dice
3 garlic cloves, minced
1 tsp crushed red pepper
2 tsp black pepper
2 tbsp salt
4 oz cold butter, diced
INSTRUCTIONS:
Sear your sausages in a pan. Once they are fully cooked, transfer to a plate and set aside. Time to concentrate on the bacon and cabbage. In the same pan, set the stove to medium heat heat and add the bacon pieces. As they begin to render, add the onions and garlic and sweat for 2 - 3 minutes. Turn the heat to high and add the cabbage. Give it one stir then leave it - you want to build a char. At around the 3 minute mark, fine, go ahead and give it a stir, and add the butter, crushed red peppers, salt and pepper. Stir it all one more time. Let the cabbage cook for 3 more minutes, pull, and serve along with the sausage.
