CHILI CHEESE SAUSAGE MAC
INGREDIENTS
2 chili cheese sausage links
1 box of your favorite mac and cheese
1 can pinto beans, drained and rinsed
1 small can chopped green chilis
¼ cup creme fraiche
1 tbsp ketchup
½ tsp smoked paprika
1 tsp brown sugar
1 yellow or while onion, diced
shredded cheddar cheese
½ bunch scallions, chopped
INSTRUCTIONS
Grill or saute your sausages whole. Once that internal temp reads 160 degrees pull it and set aside to cool.
Make your mac and cheese according to the box instructions. Once you add the cheese sauce, add the pinto beans, chopped green chilis, creme fraiche, ketchup, smoked paprika, and brown sugar and stir to combine.
Add the mac and cheese to a bowl, slice the sausages into little dics and place them on top. Add all the toppings you want (onions, scallions, cheddar cheese), and pair with a locally brewed hoppy IPA.
