SMOKED ONION & CHEESE SAUSAGE WITH RED EYE GRAVY
INGREDIENTS:
4 oz butter, diced
¼ cup bacon rough chopped
½ cup all purpose flour
2 cup coffee ( can be day old coffee)
2 cup chicken stock
1 tsp CRP
INSTRUCTIONS:
Sear your sausages in a pan or grill them. Once they are fully cooked, transfer to a plate and set aside.
Start by cooking the bacon in a medium saute pan. Once cooked through, add the butter and flour - we need to make a roux. Continually stir the roux to keep it from burning. Once it has formed, add all the liquid ingredients and reduce the heat to low. Cook for 10 minutes, stirring occasionally. Season it with salt and pepper. Strain the gravy through a fine mesh strainer and serve. Garnish with fresh chopped parsley or picked thyme.
