THAI RED CURRY SAUSAGE ROLLS
INGREDIENTS
1lb Thai red curry sausage, removed from casing
14 oz puff pastry, defrosted
1 egg yolk, beaten
1/4 cup spring onions, diced
2 tbsp sesame seeds
INSTRUCTIONS
Preheat oven to 375 degrees. Prepare a baking sheet by lining it with parchment paper. On a cutting board, roll out the puff pastry and cut the pastry sheet in half. Divide your sausage in half and spread it along the length of each piece of pastry sheet. Roll the pastry around the sausage. Brush the rolled pastry with the egg yolk. Cut each roll into 4 pieces and cook them in the oven for 30 minutes - you’ll know it’s done when the pastry is puffed and golden brown. Remove from the oven and serve with a sweet chili sauce or nam jim maew (recipe below)
NAM JIM JAEW
INGREDIENTS
2 shallots, finely chopped
1 green onion, finely chopped
1/4 bunch cilantro, finely chopped
2 tbsp fish sauce
1 1/2 tbsp white sugar
3 tbsp liime juice
1 tbsp thai chilli flake
1 tbsp toasted rice powder
INSTRUCTIONS
Finely chop the shallots, cilantro, and green onion, and combine with fish sauce, sugar, lime juice, and chilli flake. Mix and let develop for 15 minutes. Add rice podwer a little at a time to thicken. Serve immediately.
