Porcini & Green Onion “Seattle Dog”
In Washington State, a fan-favorite of late night diners is the famous “Seattle Dog”. It is a Hot Dog that is served in a Toasted Pretzel Bun with Caramelized Onions and Cream Cheese. Since Porcini Mushrooms are commonly found in the Pacific Northwest, this is a fun way to serve these delicious links.
INGREDIENTS
1 Yellow Onion, Sliced Thinly
¼ lb Butter, Unsalted
1 bunch Scallions, Chopped
Porcini & Green Onion Sausages
Garlic and Herb Cream Cheese (or flavor of your choosing)
Pretzel Buns
INSTRUCTIONS
First things first, add your onions and butter to a saute pan with a pinch of salt and place over medium heat. Slowly cook the onions until they are golden brown, soft and translucent. Grill your sausages over an open flame, or saute them in a pan with a little bit of oil. Make sure they reach the required internal temperature of 165*. Once your onions and sausages are ready, Split open your pretzel buns and warm them slightly in the oven. After they have warmed, spread a nice big spoonful of cream cheese inside the bun, place your sausage inside, and top generously with caramelized onions and sprinkle with chopped scallions. Enjoy!
