CHEF’S BEST BRATWURST
INGREDIENTS
bratwurst
3 bottles of lager or pilsner, 2 for cooking, 1 for drinking while you cook
2 yellow onions, julienned about 1/4 inch-ish thick
4 martins potato rolls
mustard, whichever type you like best
sauerkraut
whatever else you want
INSTRUCTIONS
Get your grill out. If gas, set to high, or light a charcoal grill and build a solid fire. While the grill is preheating, grab a medium pot and set to high heat. Add the beer and half of the onions to a summer (you’re gonna want to save half for serving). Add the bratwurst to the pot, reduce the heat to low, and simmer until just cooked through, about 10 minutes. Take ‘em out and throw them on grill and let them brown on all sides. Keep them on for about 5 minutes, constantly turning, until they develop a sufficent char. While those brats are grilling, keep the onions in the pan boiling, letting them get real soft. Drain ‘em and set them aside.
To serve, grill the rolls real quick, until they are golden and just a bit toasted. Brats go in the rolls, top with onions, sauerkraut, and whatever else you want.
