Autumn Bangers & Mash
These Brown Butter and Sage Sausages are a great item to use for a nice warming dish for a chilly Fall evening. Grill ‘em up or pan-sear them, either way they will pair great with this nice earthy Sweet Potato Mash and a hearty Caramelized Onion Gravy. Pour up a Guinness and toast to our neighbors across the pond with our take on the English classic dish.
Sweet Potato Mash:
INGREDIENTS:
3 lb sweet potatoes, peeled and quartered
1 lb unsalted butter, diced
1 cup heavy cream
Salt, to taste
INSTRUCTIONS:
Place the quartered potatoes in a pot and cover completely with cold water. Add a tablespoon of salt to the pot and place on medium heat. Simmer the potatoes slowly until they are completely tender throughout. Drain the potatoes completely in a colander or strainer. While the potatoes are draining, place the butter in the pot. Return the Potatoes into the pot and mash up with a whisk or multiple forks until desired texture. Add the cream and salt and whisk together until smooth and creamy.
Feel free to add additional fall flavors like a dash of Cinnamon or a skosh of Nutmeg.
