CHAURICE SAUSAGE IDEAS
“Chaurice is a house favorite for sure. A traditional creole-style sausage, it’s related to Spanish Chorizo, but more fresh. There’s so many herbs: thyme, bay leaves, parsley, this sausage boasts some solid flavors here. I’m going to keep it simple, pan fry them and toss with dirty rice and red beans for a quick-and-easy weeknight meal. Or if I’m feeling fancy, I’m making gumbo with the pan-fried chaurice, some shrimp, garbanzo beans… this would also be so good in jambalaya. Now I really want jambalaya… “ - Ben
