CHICKEN PICCATA
“Chicken piccata is an Italian-American staple, so we’re going to make pasta and it’s going to be great. Grab your Dutch oven, add a little oil, and heat on medium-high. Add the chicken to the pot, and DO NOT toss the rest of the marinade that’s left in the bag. Save it! Cook the chicken through, then remove from the heat. Sauté some onions, garlic, add a splash of white wine and reduce, and then add the marinade and bring to a boil. Reduce the heat to low, add some butter, let it simmer for a few minutes. Boil some angel hair pasta. Add the chicken back in the sauce, add chopped parsley, and when you’re ready, slice the chicken and serve with the sauce atop the pasta.” - Ben
