APPLE GINGER CHICKEN

“You know I love my sheet-pan chicken recipes! This month, I’m pairing the apple and ginger flavors with fennel, onions, and why not, more apple. Slice up these fruits and veggies, toss ‘em with olive oil and spread them in one nice, even layer on a large sheet pan. Place your chicken in the middle, maybe adding a few springs of rosemary for color, and cook in a 350 degree oven for an hour, or until the chicken reaches 165 in the thigh. The onions, fennel, and apples will soften and caramelized a bit, so when it’s all done you get this nice, warm, heart meal that has so many great flavors.
