GRILLED WAGYU SIRLOIN
2 wagyu sirloins
1/4 lb unsalted butter, room temperature
5 garlic cloves, whole
1/2 bunch hard herbs
Preheat a cast iron pan on high heat (to test if your cast iron is hot enough, splash some water into the pan - if the bubbles dance, it’s hot enough to start searing). Add both steaks to the pan and sear on high heat for 2 minutes on each side. Reduce to medium and flip steaks a third time. Add butter, garlic, and herbs. Tilt the pan just slightly (and safely!), and using a spoon, and continuously spoon the butter mixture over the steaks for around 2-3 minutes. Remove steaks from pan and let rest for 5 minutes. Slice it thin to serve.
