Dry Aged Beef Rolled Tacos

Game day on the Couch? Party with the neighbors? Annual World Fancy Finger Food Competition??? Well, that one might not be a real thing. But for all the other times you wanna “wow” your guests, or even just pat yourself on the back over some elevated snacks, try these Dry Aged Beef Rolled Tacos! Fry these up in some oil, or bake them in the oven for a healthier option. Either way, top them with some shredded lettuce, sour cream, or some fresh guac!

INGREDIENTS:

6 inch corn tortillas
1 lb dry aged beef, ground
1 tsp ground cumin
1 tsp ground coriander
1 tsp chili powder
1/2 tsp salt
Shredded cheddar cheese
2 cups canola oil

INSTRUCTIONS:

Place a large saute pan on the stove over medium heat and add just enough oil to cover the bottom of the pan. Once it is hot, add the ground dry aged beef and using a wooden spoon or spatula, break the beef up so there are no big clumps. When it is all broken up, add the spices and salt and mix well. Cook the beef until it is completely cooked and browned. Remove the beef and drain off all of the liquid fat. Allow the beef to cool completely before making the tacos.

Place your tortillas in the microwave and warm for 30 seconds so they are easier to roll. To make the tacos, take one corn tortilla and place about 2 ounces of beef down the middle of the tortilla, place an ounce of shredded cheese on top of the beef, then roll it up. Place a toothpick or skewer through the middle to hold the tortilla closed. Once all your tacos are done, place 2 cups of canola oil into a pan or skillet and bring it to 300 degrees in temperature. Fry the tacos two at a time, just until the tortilla becomes golden brown and crunchy. 

Top with your favorite taco fixins and enjoy.
