ROASTED GARLIC SAUSAGE WITH WHITE BEAN GRATIN
INGREDIENTS:
1 lb roasted garlic sausages
2 cups dry white beans, (cannellini or navy)
2 tablespoons garlic, minced
½ white onion, julienned
1 teaspoon chili flakes
1 tablespoons chopped thyme
1 tablespoon chopped rosemary
½ cup of evoo
1 ½ parmesan cheese, divided into 1 cup and ½ cup
1 panko bread crumbs
3 tablespoons unsalted butter, melted
INSTRUCTIONS:
Sear the sausages in a pan or on grill them to get them nice and charred.
Soak the beans overnight and drain the next morning. Sweat the onion, herbs, garlic, and spices in a small dutch oven or small pot. Once the garlic and onions are sweated down, add beans and water (or stock). Cover ingredients with about two inches of the liquid. Raise the heat and bring everything to a simmer. Let it simmer until the beans are tender. The time on this will vary, but start with an hour to 90 minutes. Once the beans are tender, take a 1 cup of parmesan and stir into the bean mixture to thicken it. Take the ½ cup of parmesan, panko breadcrumbs, and butter and add to a separate bowl to create our topping. Ladle on top of the beans in the dutch oven. Put that into a preheated 375-degree oven for about 25 minutes or until bubbly and golden brown on top.
Serve alongside with the sausages.
