CUMBERLAND SAUSAGE WITH BRAISED CABBAGE & APPLES

INGREDIENTS

4 cumberland sausages

1/2 red onion, julienned

1 granny smith apple, cored and roughly chopped

1 garlic clove, chopped

coleslaw mix

baby spinach

1 tbsp olive oil

1/2 tsp red wine vinegar

1/2 tsp sugar

salt

INSTRUCTIONS

Start by heating the olive oil in a medium-sized saute pan with high sides over medium-high heat. Add the onion, season with salt and cook, stirring occasionally, for 2 - 3 minutes until softened. Add the apple, coleslaw mix, sugar and red wine vinegar. Stir to combine. Cover and cook, stirring occasionally, for 8 minutes or so, until tender.

While the vegetables are cooking, cook the sausages in another pan, turning regularly, for 8 minutes-ish or until browned and cooked through.

Once the vegetables are tender, remove from the heat and stir in the spinach. Cover the pan and let the spinach wilt. Season with salt and pepper.

Add the sausage on top of the salad mix and serve. Maybe include a nice baguette or something too on the side.
