GREEN GODDESS CHICKEN MEDITERRANEAN BOWLS

INGREDIENTS:

1 bag romaine hearts, chopped and rinsed
1 small container feta cheese, crumbled
1 small red onion, julienned
½ cup kalamata olives, pitted
1 cup basmati rice
1 tbsp turmeric
Salt and pepper
1 cucumber, chopped
1 pint cherry tomatoes, halved

INSTRUCTIONS:

Start by cooking the rice. Once the rice is at a simmer, add the turmeric and salt. Give it a mix, cover, and finish cooking on low. Set aside and let it come up to room temperature before serving.

Pan-sear your chicken thighs on moderate to low heat. When those are cooked through, let them rest for a few minutes, slice and set aside.

Now, let’s build our bowls: start by adding a heaping scoop of rice to the bottom of the bowl. Then layer in your romaine, chicken, and everything else. You can use as much or as little of each ingredient as you like.

If you want to add more Green Goddess dressing, here is our recipe:

1 tbsp chopped garlic
½ cup mayo
½ sour cream
1 tbsp chopped parsley
2 tbsp chopped chives
1 lemon, juiced
1 teaspoon salt
½ teaspoon black pepper
8 basil leaves, chopped
4 mint leaves, chopped

Combine all ingredients into a bowl and whisk.
